Quinoa Tower

Quinoa, a trending (aka severely well marketed) product in contemporary home cooking. The past years these grain crop seeds have become very popular among ‘I-wanna-eat-super-healthy’ folks and ‘superfood’ die-hard’s. In case you’re wondering what the heck ‘superfood’ is, well, it’s actually just a common (marketing) term used to indicate that certain products have health benefits. Examples of these products are the (also incredibly popular) Chia seeds and Goji berries. Long term health benefits through eating these products still seems to be a running discussion among nutritionists. Whether they do/don’t benefit our health on a long term, some of the products are simply too good to NOT use in our modern day kitchen. I know for a fact that a bunch of models & fashion bloggers in my network are more than eager to read and try my quinoa tower recipe, so I’ll wrap it up for now. A final note to all my fellow foodies: it’s all about P-R-E-S-E-N-T-A-T-I-O-N! I know it’s way easier to just throw it all in a bowl and have a quick meal, but I’m sure you agree that this simple vegetarian dish looks bad-ass. Quinoa Tower

BUY:

  • 250 gr Quinoa
  • 200 gr Feta cheese
  • 1 yellow bell pepper
  • ½ lime
  • 1 clove of garlic
  • Fresh parsley (as much as you prefer; I like loads!)
  • 1 zucchini
  • 1 medium sized carrot
  • Cherry tomatoes (handful)
  • 20 gr chives
  • Homemade spice mixture:
  • 1,5 tsp. turmeric
  • 2,5 tsp. paprika powder
  • ½ tsp. cayenne powder
  • 1,5 tsp. ginger powder
  • ¼ tsp. garlic powder

DO:

  1. Boil a few cups of water in a pan, add quinoa, cover and cook for 10/15 min (Note: you can even check if the quinoa is cooked well! Simply check whether the germ separates from the seed. If so, you're ready for the next step!)
  2. Chop all veggies
  3. Bake the chopped zucchini, carrot, garlic and yellow bell pepper in a pan with some olive oil and the spice mixture (until slightly tender; I like my veggies to have a firm bite)
  4. Mix the baked veggies, all other veggies, crumbled feta cheese, finely chopped parsley & off course the cooked quinoa in a large bowl. Squeeze ½ lime over it and stir well
  5. It's presentation time!!! Grab your prettiest glass/cup, fill it up with the mixture, gently press and flip it on a plate
